Pallet Adhesive for Concert Roller Organ

I have a set of new pallets for my Concert roller organ.  They did
not come with instructions on the proper glue for attaching them.
Though I use hide glue in my reed organ pallet work, my understanding
is that hide glue does not work well when gluing to metal.

I believe the glue should be "reversible" so that on a future date
(hopefully far into the future) when they need re-covering again, it
will not be impossible to get off the old glue.  The only thing I can
think of is rubber cement, but I'm sure the experts can advise me.
