Restoring Cozatt Calliope Pipes

I bought a Cozatt calliope organ, and I am in the process of
restoring it.  The organ was in working condition when I bought it.
The restoration is going well except for the pipes.  I gave them to
a brass restorer and when I got them back many will not produce a
sound.  I think in the brass polishing process the processor did some
thing to the mechanisms of the pipes.

I do not have a complete under standing as to how they function --
I think the principal is like blowing on the top of a bottle to make
a sound.  Could you please give me a basic understanding as to how the
sound tube is constructed, and what I need to do get the sound back
and how to have the tube tuned if necessary.  Any help you can give me
would be most appreciated.
