Hot Hide Glue

I wonder what might be an advantage for hot hide glue in adding sugar
to it?  To feed bacteria or other micro-organisms?  The only additive
known to me before is citric acid, but that is something these fellow
creatures don't like!  ;-)

 [ The vivid colours (red, green, etc.) added to "Jell-O" attract kids
 [ of all ages, and the sugar makes it palatable.  Thus we can eat
 [ healthy gelatin hide glue for dessert (or so we are told...).  ;-)
