I'm not sure whether the pipes you add would be played along with the
Gedeckt rank (a softly voiced Bourdon) as an extra stop, or whether
they would be controlled independently. It's not that important, since
you already have a 5-octave range, which allows you to play bass,
accompaniment, melody, and have room left over for countermelodies or
descants. In fact, you have great flexibility, but not much variety
or volume, with your church organ rank. (I have seven such ranks in
my basement, awaiting a project such as yours).
Anyway, the pipes I would consider next would be:
Violin (Viola da Gamba), for band organ music
Principal (open diapason) for "serious" organ music
4' Flute (Piccolo) for any style
Clarinet (reed) or Vox Humana (reed) for variety

Adding just three notes of a louder stop, like a Trumpet, isn't worth
it. You'd want at least five, or better, seven bass notes. And just
now you can't use much extra bass volume without adding something to
the Gedeckts in the melody range. Try to get maybe two octaves of any
of the ranks I suggested above, preferably the Violin or Piccolo. This
is pretty much what cart and band organs use.
If you stumble over a great deal on another Gedeckt (Bourdon) rank, tune
it slightly off for a Celeste, actually a good use for a duplicate of
any non-reed rank.
