Obviously, a physical cleaning comes first. After that, there are
two techniques that can be used singly or in combination.
The first involves household bleach. You wipe down everything in the
piano and then do a second pass with a barely damp cloth to remove the
bleach, or just leave a puddle in a small dish or bowl inside the
instrument for a while. The bleach fumes burn up most or all of the
smell.
The second technique involves baking soda which claims to have odor
absorbing properties. I don't know how effective it is if you leave it
in the box, so you might want to spread it around and vacuum it up days
later. The worst "solution" is trying to mask one bad odor with
another, as with those auto deodorizers.
