I would suggest using a cheap used computer, such as an Atari or Amiga,
running a sequencer program. Both of these have built-in mouse and
joystick ports to which a foot switch can easily be attached. At least
in the case of the Amiga, there is a big sequencer program ("Bars and
Pipes") which is available free since the company left that market.
I'm sure you could trigger that from a foot switch. There is probably
free software for Ataris too.
The Ataris had a built-in MIDI interface (rather limited), the Amigas
need an adaptor costing about $25, still available.
